Sweet Potato Pie

1 cup hot mashed potatoes

1 stick butter

1 1/2 cup sugar

3 eggs - separated

1 tsp. vanilla

1 deep dish pie shell


While potatoes are hot, add butter and sugar and beat well. Add egg yolks and beat well into potatoes. Beat egg whites until stiff and fold into potato mixture. Pour into a deep pie shell and bake at 325 degrees for 25 to 30 minutes.
