Eggplant Casserole

Ingredients:

1 lg. eggplant - peeled and diced

1/2 tsp. salt

1 stick margarine

Dash black pepper

4 tsp. plain flour

1 small onion - chopped

1 cup milk

Cracker crumbs

1 8-oz. pkg. cheddar cheese - grated

Directions:

Cook eggplant in a small amount of water; drain and mash. Make sauce by melting margarine, flour, and milk. Cook until thick. Add salt, pepper, and cheese. Stir until cheese is melted. Combine eggplant, sauce, and onion. Pour into 1112 qt. baking dish and cover with cracker crumbs. Bake at 350 degrees for 20-25 minutes or until bubbly and light brown.
